Flax Coconut Gherkin Bread

Keep this bread in the fridge so that it stays fresh for a few days.

Serves 3-4

Ingredients

  • 2 tbsp Chia seeds
  • 1/2 tsp Baking soda (Bicarbonate of soda)
  • 1/2 tsp Himalayan salt
  • 1 cup desiccated Coconut
  • 3/4 cup Flax seed meal
  • 3/4 tsp Cream of tartar
  • 3 Eggs
  • 2 tbsp Olive oil, mild
  • 1/4 cup warm Water

Instructions

  1. Preheat oven to 180C/350F.
  2. Mix all dry ingredients together and stir well.
  3. In a different bowl, combine eggs and olive oil.
  4. Stir wet ingredients into dry and allow batter to sit for 1-2 minutes to thicken.
  5. Put the dough into a small bread tin and bake for 25-30 minutes until the bread is firm and well cooked.
